As far as I’m concerned, there is nothing better on a cold New England morning than hot soup. I often eat soup for breakfast, but when we don’t have any leftover, I make this simple egg broth soup. You can literally add anything you want to this – as simple as broth, egg, sea salt and pepper, but on a morning that you have more time and some good left overs, get a little more creative.
Homemade bone broth is a true superfood. It’s mineral rich, healing to the lining of the gut (thanks to the collagen in the gelatin), great for the immune system and can be very tasty. Making broth (also called stock) was routine in most households and caves – our hunter-gatherer ancestors would never dream of throwing away parts of an animal before making stock. I’m sure you’ve heard the old wives tale that good stock can resurrect the dead. We buy meat from animals raised on pasture, which is more expensive than meat raised in confinement, so making broth with the leftover bones is the best way to make our food stretch and get more for our dollar. We often freeze some of our batch once completely cool in ice cube trays or mason jars – this comes in so handy when we want to make soup or use broth in our cooking, but don’t want to use the store bought broth.

Super Simple Egg Drop Soup
Ingredients
- 2 cups chicken or beef broth - (recipe here!)
- 1-2 pastured chicken eggs
Optional add ins:
- garlic, minced
- cilantro leaves
- ginger, minced
- 2 handfuls organic spinach or kale
- hot sauce
- 1-2 TBSP coconut milk
- 1/2 tsp fish sauce
- sea salt, to taste - Not if you use the fish sauce!
- black pepper, to taste
- leftover rice or rice noodles
- sesame oil
- ghee or butter
Instructions
- Pour broth into a saucepan and bring to a boil.
- Once the broth is boiling, turn off heat. Crack and drop egg(s) in. Use a fork to whisk really quickly. Egg should cook in 1 minute.
- Add whatever else you want to the saucepan. Have fun and get creative, your opportunities are endless!
Notes
- This nourishing soup hardly needs a recipe, as you really can make it however you want. Use these ideas and let me know if you come up with other ideas!
- My favorite quick one – broth, egg, a few dashes of fish sauce, and a couple squirts of the organic fermented sriracha we love.
- My favorite when I have a little more time – broth, egg, coconut milk, fish sauce, cilantro, garlic, ginger, spinach, leftover rice, hot sauce and sesame oil. So good!
